The best thing about Marzetti’s latest line of salad dressings is their purity. They are made with simple, all-natural ingredients like extra virgin olive oil and canola oil (two good-for-your-heart oils with Omega 3 and Omega 6 fatty acids), sea salt (healthier than table salt) and most of the 10 new dressings are gluten free.
Did you know that dressings make great marinades? Especially oil based dressings such as Marzetti’s Simply Dressed Ginger Sesame, Champagne and Balsamic. My family prefers eating fish and poultry and an occasional beef steak. To change things up a bit, try using a bottle of one of these oil-based dressings as a marinade on steak, fish or chicken.
I often purchase flash frozen chicken breasts. Flash freezing is a process of freezing the meat immediately to preserve freshness and retain flavor and nutritional value. For a quick dinner, I’ll pull 4 chicken breasts from the freezer and thaw them overnight in a Ziploc bag in the fridge. I’ll add a bottle of Marzetti’s Simply Dressed Balsamic along with finely chopped cilantro and basil. Shake it up a bit and marinate that up to 48 hours in advance.
Grilled Balsamic Chicken Breasts and Tomatoes with Marzetti Simply Dressed Balsamic Salad Dressing
4 chicken breasts
1 bottle Marzetti Simply Dressed Balsamic Salad Dressing
¼ cup finely chopped cilantro
¼ finely chopped basil
2 medium sized fresh tomatoes
Mozzarella or Parmesan
Marinade all of the ingredients in 1 gallon Ziploc bag
Take the chicken breasts that were marinating in the fridge and grill them about 6 minutes per side until thoroughly cooked. If you like a charred taste, grill them a little longer. Slice the tomatoes and lightly season with pepper and salt; grill them on top of foil (so they don’t fall through the grill). Sprinkle fresh basil and cilantro on the tomatoes. Once the tomatoes are cooked, which takes only about 1 minute, place them on a plate. Then place the chicken breasts on top of the tomatoes and serve. Sprinkle fresh cilantro and basil on top. Optional: fresh Mozzarella or Parmesan cheese is great to serve on top. If you don’t have a grill or want to make this dish in the winter, use your George Foreman grill to cook the chicken, or pan roast the chicken. Delicious!
