Last minute company staying for dinner? Grumpy kids who want an after school treat? Need to get some more fruit into the day’s eating plan? Bananas to the rescue. Bananas are an easy fruit to keep on hand, versatile, nutritious and they pair well with many other foods, so give one of these quick and easy banana desserts a try next time you need a food ‘rescue’.
Tropical Fruit Compote
Pour a can of fruit cocktail (juice included) into a bowl, then dice a banana into the fruit cocktail. Sprinkle with freshly grated lime peel and gently stir fruit mixture. If you have shredded coconut on hand, toast coconut and sprinkle on top.
Banana Pudding Parfait
Layer sliced bananas, instant vanilla or chocolate pudding and roughly crushed vanilla wafers into tall drinking glasses (clear glasses) or goblets and serve an instant banana pudding parfait. Sandwich cookies, shortbread or other types of crunchy cookies can be substituted for vanilla wafers.
Banana Topped Cake Slices
Slice pound cake or Angel food cake and top with bananas slices. Drizzle with honey and sprinkle with toasted almonds or coconut.
Banana Mocha Milk Shake
Place a banana, milk, coffee flavored ice cream or yogurt and chocolate syrup into a blender and buzz until smooth.
Frozen Banana Sandwiches
These are great to make ahead of time and have on hand – Spread your favorite peanut butter variety on a large, chewy chocolate chip (or molasses) cookie. Add banana slices, then top with another cookie. Wrap in plastic wrap and place in freezer. Defrost on counter or pop in microwave for a few seconds.
Banana Sundae In A Waffle
Pop frozen waffle in toaster. Place sliced banana, raisins and maple syrup in small bowl and warm in microwave. Top toasted waffle with ice cream or frozen yogurt, then pour warm banana mixture over top.
Chocolate Banana Fondue
Melt semisweet chocolate, slice peeled banana into one inch chucks and place chopped nuts into shallow bowl. Spear banana chunks with cocktail picks, dip into melted chocolate, then roll in chopped nuts.
Warm Banana S’mores
Top a graham cracker with banana slices, thin piece of milk chocolate and a marshmallow. Top with another graham cracker and pop into a 350 degree oven until the chocolate melts and the marshmallow is warm and gooey.
Baked Banana Split
Pre-heat oven to 350 degrees. Peel and half banana lengthwise. Place cut side down in an un-greased baking dish, then top with a sprinkling of chocolate chips. Pop bananas into oven for 8-10 minutes until the chocolate chips soften.
Remove from oven, place bananas slices into banana split bowls, top with a scoop of ice cream (or frozen yogurt, sherbet or fat-free frozen whipped topping for a low calorie dessert) almond slivers, pecan or walnuts.
No Bake Banana Crisp
Melt butter and brown sugar in large skillet. Add sliced banana and orange juice, cook until bananas are well coated and soft. Spoon mixture in small serving bowls and top with crumbled oatmeal raisin cookies.
