5 Easy Meals Using Leftover Tortillas

Oftentimes, people are left with extra dinner ingredients with no ideas on how to use them. This includes flour tortilla leftovers. While there are plenty of taco, enchilada, and wrap recipes, some people may want to branch out even more. I’ve gone through the extra-tortilla scene enough times to discover new, easy ways to use tortillas. Here are my 5 easy meal ideas using leftover flour tortillas.

1. Barbecue Beef and Tater Tortillas

Ingredients
-1 lb ground beef or turkey
-Corn
-Barbecue sauce
-4-8 Tater Tots per tortilla
-Shredded Cheddar cheese

Cook tater tots according to packaging. While the tater tots are in the oven, thoroughly cook the ground beef or turkey. Add about a cup (depending on preference) of thawed whole kernel corn. Then add enough barbecue sauce to thoroughly coat the beef/turkey and corn. Once the tater tots are done, layer on tortillas, pile on BBQ beef and corn, and top with cheese.

2. Chicken and Salsa Tortillas

Ingredients
-A half a chicken breast per person
-cayenne pepper
-Black pepper
-Salsa
-Shredded Pepper Jack Cheese

Cut thawed chicken breasts into short strips and place in a pan. Season with cayenne and black pepper. Once chicken is cooked through, drain extra chicken drippings and stir in salsa. Serve on tortillas and top with Pepper Jack cheese.

3. Egg and Veggie Tortillas (sometimes referred to as “breakfast burritos”)

Ingredients
-At least 2 eggs per person
-Chopped onions
-Other vegetables of choice
-Extra virgin olive oil
-Black pepper

Begin sauteing chopped onions in the olive oil. Add in other vegetables of choice. Some suggestions are broccoli, fresh spinach, or green and red peppers. While veggies are cooking, mix the eggs with a little milk or water and pepper then scramble together. Coat a separate pan with non-stick spray and pour the eggs into the pan. Stirring occasionally, thoroughly cook the eggs. Once the eggs and vegetables are done, layer on tortillas.

4. Barbecue Chicken Tortillas

Ingredients
-A half a chicken breast per person
-Chopped onions
-Barbecue sauce
-Extra virgin olive oil

Preheat the oven to 350 degrees F. Cut thawed chicken breasts into short strips and place into a casserole or oven dish. Stir in barbecue sauce until coated to your liking. Cover the dish and place it into the oven. Cook for 1 hour, then uncover and cook for another 20 minutes. A few minutes before the chicken is done, begin sauteing the onions in the olive oil. When the onions are done, layer the chicken and onions on tortillas.

5. Peanut Butter and Jelly

Ingredients
-Peanut Butter
-Jelly or Jam
-Bananas (optional)

Spread some peanut butter and jelly on tortillas. If desirable, layer on a few banana slices and roll up the tortillas.
